Berry Beach Blast

Raise your hand if you wish you were on a sandy beach right now.

Me too!

Sometimes we can’t always escape to the beach to watch the crash of the waves and swarming seagulls overhead. There are bills to pay, children to feed, and a to-do list to accomplish on the weekends. But, I’ve got the next best thing just for you: Berry Beach Blast cocktail.

Okay, you’re right. It’s not just like sitting on the beach, but humor me for a second. Once you take a couple sips of this all natural cocktail made with coconut and lime juices and ripe strawberries, you may just mentally escape during happy hour.

Oh, and coconut water has numerous healthy benefits. According to lifehacks.org, it is rich in nutrients and reduces your blood pressure. You can buy it at any grocery store but you’ll probably find it in the organic section. Ingredients

  • 1 1/2 oz. vodka
  • 1 c. coconut juice
  • juice 1/2 lime
  • 1 sliced strawberry
  • 1 sliced lime
  • 1 T. red cocktail rim sugar

Instructions

  1. Rim a glass with lime juice.
  2. Rotate glass in red cocktail rim sugar until the rim is coated well.
  3. Add ice cubed ice to the glass.
  4. In a separate large glass mix vodka, coconut juice, and sliced fruit. Stir.
  5. Transfer mixed cocktail into ice glass.
  6. Garnish with a strawberry. (optional)

Strawberry Lemon Cream Cheese Turnovers

I have a major sweet tooth, which doesn’t work out too well when I live with someone who doesn’t eat desserts. Ah, the humanity! Like, who doesn’t eat desserts?

So, every now and again I actually try my hand at “baking.” I don’t consider myself a baker because sometimes things just don’t turn out right and sometimes my recipes are semi-homemade. But at least I try, right? You’re going to want to try this easy recipe for flaky, scrumptious Strawberry Lemon Cream Cheese Turnovers. They can be eaten for breakfast, as a dessert or, when like me, you’ve given in to a craving in the middle of the afternoon.

Strawberry Lemon Cream Cheese Turnovers

You can substitute any berry in place of strawberries.

Ingredients

  • Strawberry Filling:
  • One quart sliced strawberries (mix with 2 tsp sugar and refrigerate for at least an hour)
  • 4 oz softened cream cheese
  • 1/3 cup powder sugar
  • 1 T vanilla
  • 2 tsp strawberry juice
  • Pastry:
  • 8 oz can Pillsbury Crescent Dough Sheet Original
  • Frosting:
  • 1/4 cup powder sugar
  • Juice of 1 lemon
  • (add low-fat milk to thin the frosting a bit, if you prefer it thinner)

Instructions

  1. Wash, de-stem, and slice the strawberries. Mix the strawberries in a medium bowl with the sugar.
  2. Cover and refrigerate for at least one hour.
  3. Heat the oven to 375 degrees.
  4. When the strawberries are ready, drain the berries from their juice. Reserve the juice in a separate container. Combine all filling ingredients and add 2 tsp strawberry juice to it. Mix well.
  5. Lay out crescent dough on an ungreased cookie sheet. Slice the dough sheet into six large squares. Stuff each square with a large mound of strawberry filling. Fold the dough square into a triangle shape around the stuffing. Use your fingers to pinch around two edges of the triangle. Dust with cinnamon (optional) and bake for 10-13 minutes or until golden brown.
  6. Serve warm with drizzled frosting. Garnish with lemon zest and sliced strawberries.

Spinach Fruit Salad with Raspberry Vinaigrette Dressing

I don’t know about you, but sometimes I get tired of catering to my meat-and-potatoes man and I want to lighten up my entreé. While he wouldn’t be caught dead eating this fruit loaded salad, it’s one of my indulgences. It makes a layered lunch or dinner salad that tastes tangy, sweet, and finishes with a hearty bacon flavor. And well, Spinach Fruit Salad with Raspberry Vinaigrette Dressing  just looks gorgeous. Yay for pretty food!

Note: You could use a store-bought raspberry vinaigrette, but the recipe is simple if you have the time to whisk it up.

To make the salad base, simply layer or group the following ingredients in a large bowl. Drizzle with Raspberry Vinaigrette Dressing recipe below.

Ingredients:

  • spinach leaves
  • blueberries
  • sliced strawberries
  • sliced kiwi
  • sliced Gala apple
  • shredded cheddar cheese (feta or goat cheese could be substituted)
  • crumbled hickory bacon
  • slivered almonds (toasted walnut could be substituted)
  • Raspberry Vinaigrette Dressing

Raspberry Vinaigrette Dressing

A light and tangy dressing, it adds a fruit forward flavor to any salad.

Ingredients

  • 1/2 cup raspberries
  • 3/4 cup olive oil
  • 1/4 cup water
  • 1/4 cup apple cider vinegar
  • 1 T honey
  • 1 T dijon mustard
  • pinch of black pepper
  • pinch of salt
  • pinch of black poppy seeds (optional)

Instructions

  1. Combine all ingredients in a bowl and whisk until well blended.
  2. Refrigerate in a jar for one hour prior to serving, if time allows.
  3. Shake jar before serving.

Notes

This dressing will last one week in a jar in your refrigerator.
