Healthy Brunch Recipes for Mother’s Day

Celebrating your mother on her special day shouldn’t include crossing your fingers hoping you can get a table at a restaurant or standing in a long buffet line. Why not serve a healthy, flavorful brunch with classic recipes that mom will love in the comfort of your home? She’s worked hard all her life for you, now you treat her with an award-worthy, delicious meal! There is nothing that says “I love you” like a home-cooked meal.

Each one of the following recipes is tested and approved by fellow food bloggers (and I included a recipe of my own). The recipes are meant to be healthier than the usual carb-heavy buffet holiday meal. Scroll down to pick your favorite recipes!

If you’re someone who needs to feed a lot of people, then you will love making my Blackberry Belgian Waffles as a crowd-pleasing breakfast option. They’re easy to prepare! The deep pockets of warm waffle are just the vessels you need to hold melted butter, warm maple syrup, and a few extra blackberries. Grab the recipe.

Not of fan of waffles or don’t own a waffle maker? I’ve got you covered! Opt instead for yummy Brioche French Toast with Whipped Lemon Mascarpone from Windy City Dinner Fairy. Enjoying a variety of textures and flavors makes for a well-rounded brunch so I never forget to include a green salad. Buy This Cook That’s Grilled Citrus Spring Salad is a mixture of asparagus, garden radishes, and sweet green peas tossed in homemade vinaigrette and topped with glazed pecans for garnish. For me, it’s not a classic breakfast without an egg dish on the menu. I love the idea of a make-ahead frittata that can be warmed up in the oven just as I’m setting the table. This Sun-Dried Tomato and Sweet Potato Frittata by Whole New Mom can be prepared in under 30 minutes and serves four people so double the recipe if necessary. Blackberry Mint Fizzy Cocktail

Of all of the seasons to make cocktails, summer is my favorite! A cool drink with the fresh flavors of muddled fruit and mint is refreshing and bright in flavors and colors. My Blackberry Mint Fizzy Cocktail is a drink you can make for one or as a big batch for guests, if you triple the ingredients!

The best part of a serving a muddled cocktail is that it looks as if it required a ton of effort to make, but that’s simply not true. If you don’t own a mortar and pestle, you can use a wooden spoon inside of a tall glass to smash the blackberries for this drink.

I would recommend wearing an apron or coving the mortar with your other hand when muddling the blackberries to prevent stains on your shirt.

Once the blackberries are completely smashed, scoop the fruit goop (that’s a yummy word!) into the cocktail glass. (Instead of muddling the mint leaves, I tore them into super small pieces with my hands releasing their herbal aromatic flavor before dropping them into the glass.) Then add the sugar.

Next, add the juice of one lime wedge.

Summer drinks are made so much better tasting because of citrus from an orange, lime or lemon.

Now, add the vodka – yes, please!

You’re almost done! All you need to do is top off the glass with crushed ice and bubbly club soda to the rim.

No need to transfer this cocktail to another glass to try to shake up the ingredients. Simply add colorful straws and stir the drink gently.

Garnish the glass with a sprig of fresh mint, a lime wedge, more blackberries, and colorful straws before serving! Cheers my dears!

You could easily swap blackberries for strawberries, blueberries, or another fruit of your choice.

Ingredients

  • 4-5 blackberries
  • 4-5 mint leaves
  • 1 tsp sugar.
  • 1/2 cup vodka
  • Crushed ice
  • Lime juice of one lime wedge
  • 1/2 cup club soda
  • 1-2 blackberries and a mint sprig for garnish.

Instructions

  1. Muddle 4-5 blackberries.
  2. Tear 4-5 mint leaves. Add blackberries and mint into a cocktail glass.
  3. Add 1 tsp sugar.
  4. Add 1/2 cup vodka.
  5. Fill cocktail glass halfway with crushed ice.
  6. Lime juice squeezed from one small lime wedge.
  7. Fill glass nearly full with crushed ice.
  8. Fill remaining space in glass with club soda about 1/2 cup.
  9. Stir cocktail with straw and top with fresh blackberries and a mint sprig for garnish.

Notes

You could easily substitute vodka for rum or silver tequila. Looking for a non-alcoholic cooler? Take out the booze!

Angel Food Cupcakes with Vanilla Blueberry Sauce

When I make desserts, I get a little crazy. Good kind of crazy. My creativity runs wild and before I know it, I’ve swirled blueberries inside angel food cake and topped it with vanilla icing and ….yes, more vanilla blueberry sauce. Total decadence.

My Angel Food Cupcakes with Vanilla Blueberry Sauce is an recipe idea that came to me during a daydream. I thought, “How can I combine light and airy cake with decadent blueberries?”

So when the boyfriend (who doesn’t eat desserts – uh, what the heck?) was away, I made a mess of the kitchen and started preparing the Vanilla Blueberry Sauce so it could cool before baking the angel food cake. Wanting to swirl the sauce through the cake batter, I knew the sauce couldn’t be added to the batter while the berries were warm.

Now, don’t be fooled. When I’m making a dessert on a work night, it’s a semi-homemade one. I simply used Betty Crocker’s Angel Food Cake box mix by combining 1 1/4 cups water with the dry mix and then added a few tablespoons of cooled Vanilla Blueberry Sauce to the cake mix. Then, I used a wooden skewer to pull the sauce throw the cake mix until swirls appeared. Using a ice cream scoop, I portioned wet cake mix into paper line cupcake baking pans.

If you fill the cupcake liners all the way to the top with the swirled batter, expect them to rise over the edge when you bake. Only fill the cupcake wells about 3/4 full.

Bake the angel food cupcakes at 350 degrees for 11 minutes (or until a toothpick pulls clean from their centers.) I prefer to remove the paper liners from the cupcakes prior to decorating and servings. Allow the cupcakes to completely cool before icing them with store-bought vanilla icing. Drizzle with more Vanilla Blueberry Sauce and top with a couple of fresh blueberries and garnish with a fresh sprig of mint.

Look at light beautiful glory! You might need a fork, but I just ate mine over the sink and let the oozy blueberry sauce drip down my arm. That’s my style.

This dessert would be a good one to make with kids and allow them to decorate their own cupcakes with the sauce and berries. You never know. Maybe they’ll even try the mint!

Ingredients

  • Vanilla Blueberry Sauce Ingredients:
  • 1 cup fresh blueberries
  • 1/4 c. water
  • 1/4 c. sugar
  • 1 T. lemon juice
  • 1 T. cornstarch
  • 1 T. cold water
  • 1 T. vanilla extract
  • pinch lemon zest
  • Angel Food Cake: (Make according to box directions)

Instructions

  1. Combine the first 4 ingredients in a small saucepan and stir gently over medium heat. Do not allow it to boil.
  2. Meanwhile, stir together the cornstarch and cold water in a small ramekin.
  3. Add the cornstarch slurry to the blueberry mixture stirring slowly while it thickens.
  4. Stir for about 3 minutes.
  5. Remove from heat.
  6. Add vanilla and lemon zest.
  7. Pour into a small glass bowl and leave uncovered in the refrigerator to cool until used in the cake mix.
  8. Once cooled, add 2-3 tablespoons of the vanilla blueberry sauce into the already prepared wet angel food cake mix.
  9. Using a wooden skewer, pull the vanilla blueberry sauce through the cake batter until large swirls form.
  10. Using a ice cream scoop or large spoon, portion the finished cake mix into paper lined cupcake pans.
  11. Bake cupcakes at 350 degrees for 11 minutes.
  12. Allow cupcakes to cool completely before topping with vanilla icing and blueberry sauce.
  13. Garnish with more (fresh) berries and a sprig of mint.

Creamy No-Churn Vanilla Ice Cream with Cherries and Chocolate

What if I told you that you could make ice cream with only three ingredients plus your favorite mix-ins and it didn’t require fancy equipment? You can!

I’m on a major sugar bender right now. It’s unusual for me to eat sweets three days in a row but nothing beats my homemade Creamy No-Churn Vanilla Ice Cream with Cherries and Chocolate. Not movie candy. Not baked goods. This dessert is it for me. It’s incredibly delicious and I want to give you the “scoop” on how to make it at home.

If you can use a hand mixer and a spatula, you can make this yummy recipe. Preparing the ice cream is easy. Waiting about eight hours for it to freeze is the tough part. If you would prefer different fruit or candy mix-ins, you certainly can swap them for the fresh cherries and chocolate. In fact, I almost wish I remembered to add chopped walnuts to this recipe, but that’s okay! I can just sprinkle them on top of my ice cream or get wild and create a sundae with whipped cream too.

Can you believe how amazing that scoop of ice cream looks topped with chocolate dipped cherries? As vanilla ice cream as the base, the possibilities for flavor combinations is limitless. Why not peanut butter and chocolate? Or a take on Smores using mini marshmallows? Or perhaps chunked pieces of apple pie from the grocery’s bakery department?

I was inspired to use the cherry-chocolate flavor pairing after purchasing a pound of fresh dark cherries from the grocery store. If you buy fruit that is in season, it forces you to use your creativity to build a recipe around it. What goes well with cherries? Say it with me…chocolate! To keep the recipe inexpensive, I used semi-sweet chocolate chips. You’ll also need two cups of cold, heavy whipping cream, vanilla extract, and one can of sweetened condensed milk to make the ice cream base. Preferring big chunks of fruit in my ice cream, I halved each cherry rather than chopping them.

no-churn ice creamBe sure to lay out all of your kitchen tools and ingredients before starting this recipe, a method many chefs refer to as “Mise en Place.” This is French for putting everything in place. You’ll need to be organized so you can quickly move the Seran wrap covered ice cream pan to the freezer, which if you’re like me, means first clearing a flat space in the deep freeze.

To prepare the ice cream base, beat the heavy whipping cream in a large bowl until stiff peaks form on the hand mixer’s beaters. In a separate large bowl, mix a can of sweetened condensed milk and one tablespoon vanilla extract with spoon by hand. Gently fold in the whipped cream a large clump at a time until all of it is gently incorporated into the sweetened condensed milk and vanilla extract mixture. If you mix too the whipped cream into the ice cream base in a hurried fashion, you’ll end up with sweet soup. Patience pays off.

I added about 2 cups pitted and halved fresh cherries and 1 cup of semi-sweet chocolate chips and gently mixed them into the ice cream base mixture. When finished, pour the bowl of ice cream into a glass loaf pan. Cover tightly with Seran wrap and freeze at least 6 up to 8 hours before serving. It was harden just like any other scoopable ice cream. This is not ice milk or soft serve ice cream.

Ingredients

  • Ice Cream Base:
  • 2 cups heavy whipping cream
  • 1 can sweetened condense milk
  • 1 T. vanilla extract
  • Mix-Ins:
  • 2 cups pitted, halved fresh cherries
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Pour heavy whipping cream into a large bowl.
  2. Using a hand mixer on a middle speed setting, mix the heavy whipping cream until it begins to thicken. You'll know it's done when it forms stiff peaks on the beaters. When finished, set the bowl aside.
  3. In a separate large bowl, add vanilla extract to the sweetened condensed milk and mix thoroughly. Set the bowl aside.
  4. Using a rubber spatula, gently fold in the whipped cream a little at a time into the condensed milk and vanilla mixture. Continue adding the whipped cream and gently continue mixing until all three ingredients are well incorporated.
  5. Add in the pitted, halved cherries and chocolate chips (or your mix-ins of choice)
  6. Pour ice cream base mixture into a glass loaf pan.
  7. Cover tightly with plastic wrap.
  8. Freeze 6-8 hours.

No Bake Energy Bites: A Mid-Day Snack to Keep You From Feeling Hangry

Hangry – The word ‘hangry’ is a concise way to describe a common feeling. Hangry is a clever word combination of hungry and angry, and an adjective that describes being irritable due to hunger, according to Webster’s Dictionary.

Anyone who works with me knows that I keep snacks in my drawer (fruit roll-ups, whole fruit, or granola bars) so that in the event I begin to feel hangry, I’ve got relief nearby. Sometimes I can feel myself getting hangry mid-morning and nobody wants me to get hangry. Nobody. So, I grab a healthy snack.

Inspired by our healthier “lifestyle” (we’re not calling it a diet), I was inspired to make No Bake Energy Bites: A Mid-Day Snack to Keep You From Feeling Hangry. They taste like no bake cookies and curb your hunger thanks to the addition of oatmeal and chia seeds, a popular ingredient in smoothies and granola bowls. Chia seeds are a trending super food high in nutrients that provides boost of energy. You can purchase them in bulk at any health food store. Because they expand a bit when wet, they make you feel full! Oh, and total bonus…chia seeds are suppose to promote healthy skin and reduce the signs of aging. Well, duh! I think I’ll add them to every early morning breakfast.

These No Bake Energy Bites taste like a cookie but they’re healthy for you. This recipe included cocoa, chocolate chips, peanut butter, almonds, vanilla and honey add-ins. See the recipe card below.

Using quick oats as the base, the mix-in ingredient options are about as endless as your imagination. For example, you can make ingredient substitutions or try these flavor combinations:

  • butterscotch chips for chocolate chips
  • chopped dried bananas, bacon bits, and peanut butter
  • dried apple chips with raisins and cinnamon
  • sunflower seeds instead of peanuts or almonds
  • Nutella and dried berries like cherries or blueberries
  • crushed honey oat cereal and peanut butter
  • cranberries, raisins, and toasted coconut with Nutella (see photos below)

Making No Bake Energy Bites is as easy as combining all of the recipe ingredients in a bowl, mixing them (your hands are a great kitchen tool but beware – the added honey will leave your hands sticky), and rolling them into one inch balls after the mixture refrigerates for 30 minutes. It’s a cinch!

This recipe version of No Bake Energy Bites includes cranberries, chopped peanuts, chia seeds, toasted coconut, raisins, Nutella, honey, vanilla, and oatmeal.

Work together all of the ingredients by pressing your spoon into the walls of the bowl and then finish mixing.

If you initially have a hard time rolling the mixture into balls, squeeze it in your hand until the mixture is tight and then use both hands to form a one-inch ball. Tip: Layer parchment paper (or wax paper) between the layers of energy balls in an airtight container before you store them in the refrigerator for at least two hours. I’m impatient and put my Tupperware container of energy bites in the freezer for one hour. A-c-t-u-a-l-l-y, I must admit that I ate one before the rest even made it into the refrigerator. They’re simply delicious!

Cranberry Raisin with Nutella No Bake Energy Bites

There you have it! No Bake Energy Bites are healthy for you and will save you from hunger pains at work so you don’t “bite” your co-worker’s head off. Yes, I went there (insert eye roll). Grab some oatmeal and your favorite mix-in ingredients and get started making tomorrow’s mid-day snack (or breakfast)!

Ingredients

  • 1 c. quick oats
  • 1/2 c. natural peanut butter
  • 1/3 c. honey
  • 1/4 c. cocoa
  • 2 T. chopped almonds
  • 2 T. milk chocolate chips
  • 1 T. chia seeds
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mix all ingredients with a spoon.
  2. Refrigerate mixture in the bowl for 30 minutes.
  3. Remove bowl from the refrigerator and shape it into one-inch balls.
  4. Place energy bites into a airtight container. Separate layers with wax paper or parchment paper.
  5. Refrigerate at least an hour before serving.

Blackberry Belgian Waffles

If you’re someone who hosts family or friends overnight at your house, then you will love making Blackberry Belgian Waffles as a crowd-pleasing breakfast option. I was so impressed with a friend’s beautiful breakfast plate during our last stay, I insisted we make them again.

The deep pockets of warm waffle are just the vessels you need to hold melted butter, warm maple syrup, and a few extra blackberries. Set out the prepared waffle mix, a choice of fruits and toppings, and let your guests make their own breakfast-hotel style!

Tip: Don’t overfill the waffle maker like I did and create a countertop mess. Yikes!

Ingredients

  • Waffle Mix:
  • 2 eggs
  • 2 c. all-purpose flour
  • 1 1/2 c. milk
  • 2 T. white sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1/2 c. mashed blackberries
  • Toppings:
  • 1/4 c. maple syrup
  • whole black berries

Instructions

  1. Whisk together the eggs in a large bowl. Add remaining waffle mix ingredients until slightly lumpy.
  2. Allow the mix to sit in the bowl for five minutes prior to pouring it into a heated waffle iron.
  3. Use a measuring cup to scoop the mix and drizzle it evenly on to the waffle iron.
  4. (It will help to use a wooden spoon to spread the mix into the corners so that the waffles come out evenly shaped.)
  5. Shut the lid and let the waffles form for about 7 minutes until golden brown. (Appliances vary so take a peak to see if your waffles are finished.)
  6. Remove waffles from the waffle iron and immediately plate and serve with warmed maple syrup and whole blackberries.
