Ingredients

  • 1 1/2 oz silver tequila
  • 1/2 c. grapefruit juice
  • 1/2 c. lemon-lime sparkling water
  • juice of 1/2 lime
  • kosher salt
  • cubed ice

Instructions

  1. Rim a cocktail glass with a lime slice.
  2. Then rotate the glass in kosher salt on a small plate to rim it.
  3. Fill glass with ice cubes.
  4. In a separate larger glass, combine all ingredients except salt.
  5. Stir well.
  6. Pour into ice-filled cocktail glass and garnish with grapefruit slice.

Notes

Use a short cocktail glass for this drink recipe.

You wouldn’t believe me unless I showed you, so I’ve got the summer’s easiest dessert recipe ever. I’ve never created anything in the kitchen that was this simple. 5 Minute Lemon Pie is bright in flavor and the kind of dessert you can throw together in a hurry if you’re expecting company. And you only need three ingredients!

Make sure you refrigerate the pie for at least an hour before serving so it can set up. Garnish with whipped cream, berries of your choice, and lemon slices. You could also try different flavor combinations instead of lemon such as key lime and berries.

The only thing sweeter about this pie is that it only takes 5 minutes to make.

Ingredients

  • 1 9-inch graham cracker pie crust
  • 2 14 oz. cans sweetened condensed milk
  • 1 c. lemon juice
  • 1 lemon (optional garnish)
  • 1/2 pint blackberries (optional garnish)
  • whipped cream (optional garnish)

Instructions

  1. Pour sweetened condensed milk and lemon juice into a large bowl and mix thoroughly.
  2. Pour mixture into a graham cracker pie crust.
  3. Refrigerate for at least an hour.
  4. Garnish with whipped cream, lemon, and blackberries.

Notes

Don't like lemon? Try key lime or another fruit juice to flavor your pie.

Shrimp Lovers! Where ya at?

My Shrimp Scampi with Pasta and Parmesan must be the easiest, fastest classic shrimp recipe of all time…well, next to shrimp cocktail. Bonus: It’s not that expensive either. If you look for a sale on a frozen bag of shrimp at the store and you are willing to shell these little guys yourself, you’ll save money.

My goal is to provide you with recipes you can make after a long workday without little fuss. Real food.

If you can boil pasta and chop a few ingredients, you’re on your way to enjoying tender shrimp scampi in less than thirty minutes.

The lemon juice adds brightness to the richness of the garlic butter wine sauce, a perfect balance of flavors. Don’t skimp on the fresh herbs, which give the dish depth of flavor. And who doesn’t love a recipe that includes booze? Use a dry white wine, that you would normally sip on anyway, to add to the garlic butter sauce. Warning: Don’t overdue it on the red pepper flakes, if you opt to include them. A little red pepper goes a long way. Oh, and don’t forget to sprinkle shredded parmesan after plating to finish it off.

Ingredients

  • 3 T unsalted butter
  • 2 T olive oil
  • 4 diced large garlic cloves
  • 1/2 c. chardonnay
  • 1/2 tsp. kosher salt
  • pinch red pepper flakes (optional)
  • large pinch black pepper
  • 1 lb large raw shelled shrimp
  • 1/4 c. chopped parsley
  • 1/2 juice lemon
  • 1/2 box Barilla spaghetti
  • 1 T shredded parmesan

Instructions

  1. Using medium heat, melt olive oil with butter in a large skillet.
  2. Add garlic and saute while stirring for just under a minute.
  3. Add chardonnay, red pepper (optional), salt, and pepper.
  4. Cook while stirring occasionally until the sauce reduces 1-2 minutes.
  5. Add shrimp and saute for 4-5 minutes.
  6. In the meantime, bring a large pot of water to a boil and cook the dry spaghetti according to package directions.
  7. Add parsley and lemon juice. Stir. Reduce to low temperature and cover.
  8. Add in cooked and drained spaghetti to scampi and toss.
  9. Add parmesan and serve warm.
  10. Garnish with a sprig of parsley.

Notes

Red pepper flakes are optional.

It’s water. Unless I’m parched from a morning dog walk or at the gym, I don’t drink the doctor recommended daily amount of the water.

  • 1 c. club soda
  • 1 c. water
  • 1/4 of a sliced cucumber
  • 1/3 of a sliced lemon (remove seeds)
  • few springs peppermint
  • ice cubes

Instructions

  1. Add all fruit and mint to bottom of an empty, tall glass.
  2. Fill with ice cubes.
  3. Fill half of glass with club soda.
  4. Fill rest of glass with water.
  5. Drop in a few raspberries.
  6. Garnish glass with a slice of lemon and a peppermint leaf.

Strawberry Lemon Cream Cheese Turnovers

I have a major sweet tooth, which doesn’t work out too well when I live with someone who doesn’t eat desserts. Ah, the humanity! Like, who doesn’t eat desserts?

So, every now and again I actually try my hand at “baking.” I don’t consider myself a baker because sometimes things just don’t turn out right and sometimes my recipes are semi-homemade. But at least I try, right? You’re going to want to try this easy recipe for flaky, scrumptious Strawberry Lemon Cream Cheese Turnovers. They can be eaten for breakfast, as a dessert or, when like me, you’ve given in to a craving in the middle of the afternoon.

You can substitute any berry in place of strawberries.

Ingredients

  • Strawberry Filling:
  • One quart sliced strawberries (mix with 2 tsp sugar and refrigerate for at least an hour)
  • 4 oz softened cream cheese
  • 1/3 cup powder sugar
  • 1 T vanilla
  • 2 tsp strawberry juice
  • Pastry:
  • 8 oz can Pillsbury Crescent Dough Sheet Original
  • Frosting:
  • 1/4 cup powder sugar
  • Juice of 1 lemon
  • (add low-fat milk to thin the frosting a bit, if you prefer it thinner)

Instructions

  1. Wash, de-stem, and slice the strawberries. Mix the strawberries in a medium bowl with the sugar.
  2. Cover and refrigerate for at least one hour.
  3. Heat the oven to 375 degrees.
  4. When the strawberries are ready, drain the berries from their juice. Reserve the juice in a separate container. Combine all filling ingredients and add 2 tsp strawberry juice to it. Mix well.
  5. Lay out crescent dough on an ungreased cookie sheet. Slice the dough sheet into six large squares. Stuff each square with a large mound of strawberry filling. Fold the dough square into a triangle shape around the stuffing. Use your fingers to pinch around two edges of the triangle. Dust with cinnamon (optional) and bake for 10-13 minutes or until golden brown.
  6. Serve warm with drizzled frosting. Garnish with lemon zest and sliced strawberries.
