Baked Apples Filled with Oatmeal, Dates and Brown Sugar

Hello, Fall! Good to see you again.

October is the best month of the year. Why? It’s my birthday month (holla!), breweries are prepping for Oktoberfest, and the food….oh, the food!

Many cooks have prepared baked apples to welcome autumn, but my recipe incorporates chopped dates and walnuts with oatmeal to bring home real fall flavor. Leave room for dessert tonight because you will want to gobble up the entire apple. They serve well with vanilla bean ice cream too!

Prior to baking, stuff these babies as full as you can with the filling ingredients.

Here are the instructions for Baked Apples with Oatmeal, Dates and Brown Sugar:

1. Preheat oven to 350 degrees.

2. Wash two Pink Lady Apples. Core out the inside without penetrating the bottom. (Remove about half of the apple’s core.)

3. Add the butter to a small microwavable bowl and heat it about 10 seconds until it’s melted. Add remaining filling ingredients. Stir to combine all thoroughly.

4. Stuff each apple with the filling.

5. Set apples upright into baking dish. Add enough water around the apples until the bottom surface is covered.

6. Bake apples at 350 degrees for one hour. Serve warm. Devour.

The apple’s exterior color fades during baking, but the flavor is accentuated. Trust me. These apples are delicious on their own or served with vanilla bean ice cream.

Ingredients

  • 2 cored, large Pink Lady apples
  • 4 T unsalted butter
  • Filling:
  • 1/4 c. oatmeal
  • 1/4 c. chopped dates
  • 1/4 c. brown sugar
  • 1/4 c. chopped walnuts

Instructions

  1. Preheat oven to 350 degrees.
  2. Wash and core apples but don't remove all of the inside of the apple. Leave enough apple that you don't pierce the bottom of the apple.
  3. Melt butter in a microwavable dish.
  4. Add remaining filling ingredients.
  5. Stir butter and filling ingredients thoroughly. Stuff filling into each apple evenly. (You can add a few extra walnuts or oatmeal, if you desire.)
  6. Place apples in baking dish. Fill dish with enough water to cover the bottom of the dish.
  7. Bake uncovered for 1 hour.
  8. Serve warm.

Peanut-Butterscotch Apple Nachos

My three favorite meals (today) are a perfectly cooked ribeye, Red Rock Canyon Grill’s signature house salad, and dare I say it…nachos.

Serious nacho eaters know that there is craft to creating the perfect mound of delightful tailgate goodness. You must layer chips and cheese (and toppings of your choice) in multiple even layers. You can’t allow too much sprinkle cheese to hit only one area of the chips. Every chip must have an equal amount of cheese on top. And your nachos are not complete until you add free sour cream, sliced avocado, and homemade salsa.

Since it’s late October, I decided to create a recipe that combines my love of nachos and ooey-gooey fall flavors: Peanut-Butterscotch Apple Nachos. I used Rachel Ray’s recipe for her dessert fondue and simply added the warm drizzle over a bed of sliced Gala apples. Later, I also topped the apples with mini marshmallows, chocolate chips, and chopped walnuts. You could also use the fondue to dip pretzel sticks or candied bacon, a super suggestion for the next time I create this beautiful little plate.

Ingredients

  • 3/8 c. milk (half of 3/4 cup)
  • 11oz. bag butterscotch chips
  • 1/2 c. smooth peanut butter
  • 1 T. boiling water

Instructions

  1. In a medium saucepan, warm the milk over medium.
  2. Ad the butterscotch morsels and cook, stirring, until smooth, about 10 minutes.
  3. Remove from heat.
  4. Whisk in the peanut butter until smooth.
  5. Stir in the boiling water.
  6. Serve over a plate of sliced apples.
  7. Top with chocolate ships, walnuts, and mini marshmallows.

Notes

I halved her original recipe since I didn't want to yield as much fondue.

Apple Cider Muffins with Walnuts and Warm Caramel Sauce Drizzle

Is this recipe for breakfast or dessert? Who cares! Either way, Apple Cider Muffins with Walnuts and Warm Caramel Sauce Drizzle are whatever you want them to be because they’re that delicious.

As mentioned before, I’m not a from scratch baker. So I doctored up these muffins made from Martha White Apple Cider package mix with bits of fresh red apple, walnuts, and caramel sauce. Semi-homemade recipe cooks should feel any shame in their style of cooking because it’s practical and easy to do when you’re short on time.

Why make basic muffins when you can pull out all the stops and add seasonal baking ingredients to them? Have fun and try these topping swaps as well: butterscotch chips or white chocolate chips, crunchy peanut butter and sliced apple, oatmeal crumble topping or cream cheese vanilla frosting with almond slices. Don’t forget a warm cup of coffee to enjoy them with too.

Ingredients

  • Muffin Mix:
  • 1 package Martha White Apple Cider Muffin Mix
  • 1/2 c. milk
  • 1/2 diced red apple
  • 1/8 c. chopped walnuts
  • Toppings:
  • chopped walnuts
  • 2 T. warm caramel sauce

Instructions

  1. Preheat oven to 425 degrees.
  2. Mix apple muffin mixture ingredients.
  3. Spray a muffin tin with canola cooking spray.
  4. Pour muffin mix into six wells of the muffin tin.
  5. Bake 10-12 minutes on the middle rack.
  6. Remove from oven and allow to partially cool.
  7. Run a toothpick around each muffin to remove from pan, if necessary.
  8. Warm the caramel sauce in the microwave for 10 seconds.
  9. Top muffins with the rest of the walnuts and caramel sauce.

Peanut Butter Banana Honey Overnight Oats

Sometimes I wish I could come up with a genius invention to cash in on. For example, the person who invented the Post-It note is a total genius. I use those every day!  While I do get creative in the kitchen when it comes to recipes, I can’t claim the overnight oats idea. It’s a brilliant recipe that is incredibly simple to make and you can flavor it up any way you like with mix-ins. If you’ve got a mason jar and oatmeal, then you’re halfway there.

Peanut Butter Banana Honey Overnight Oats combines many of my favorite flavor combinations and includes heart-healthy ingredients. Many recipes for overnight oats call for chia seeds. I wasn’t going to drive all the way to the store just for fancy seeds and I think my recipe came out just as great or even better.

While I made a large batch of overnight oats, which I’ve eaten on for two mornings, you could make a half size mason jar for one serving. Simply layer the ingredients (see recipe card below), shake, and refrigerate overnight. Don’t be put off by the look of the mixture when you spy it in the refrigerator the next morning. It will taste delicious!

Open the jar and top it with your favorite flavors. You can use everything from dark chocolate to fruit. Let your imagination go wild as you enjoy a guilt-free, healthy breakfast.

The first time I read about “healthy fats” I thought it was an oxymoron. It turns out that healthy fats are r-e-a-l! Monounsaturated fats are actually good for your body and they have positive effects on your health. The nuts in this recipe contain protein, vitamins, and fiber.

Walnuts contain fatty acids which are good for heart health and peanuts have compounds that keep your cholesterol on the level. You can feel good about eating dark chocolate chips in your breakfast. A study noted in a 2014 article “Why is Dark Chocolate Good for You? Thank your Microbes” in Scientific American by Katherin Harmon, found that dark chocolate “improves vascular function and cardiovascular health in general.”

And what’s all the buzz about using honey in recipes? Honey is high in antibacterial properties and published studies confirm that a daily consumption of the liquid gold helps boost the memory of women experiencing menopause.

Ingredients

  • Overnight Oats Mixture:
  • 1/2 c. quick oats
  • 1/2 c. plain low-fat yogurt
  • 1/4 c. soy milk (vanilla flavor optional)
  • 1 T cocoa powder
  • 1 tsp vanilla
  • 1 tbsp peanut butter
  • 1 tsp honey
  • Mix-In Toppings:
  • 1 T. whole walnuts
  • 1 T. peanut butter
  • 1 T. dark chocolate chips
  • 1/2 sliced banana
  • 1 tsp honey

Instructions

  1. Layer all ingredients in a mason or Bell jar starting with the oats.
  2. Secure the lid.
  3. Shake for 5 seconds.
  4. Refrigerate overnight.
  5. After the oats have refrigerated overnight, open the jar and top with sliced banana, walnuts, dark chocolate chips, peanut butter, and a honey drizzle.

Creamy Dill Chicken Salad Sandwich

Nothing, I mean nothing is a delicious as my mom’s homemade chicken salad. Over the years, I created my own take on her recipe but with a few changes. I love fresh dill and mayo as a spreadable combination on any sandwich and this Creamy Dill Chicken Salad Sandwich bumps it up a notch and incorporates cranberries (optional). I think mom would be proud.

It’s so good, I might just eat two sandwiches in one sitting. Want to avoid carbs? Add this creamy salad on top of mixed greens instead.

Ingredients

  • 2 diced, poached skinless & boneless chicken breasts (You could cut prep time by using a store bought rotisserie chicken.)
  • Creamy Dill Chicken Salad Base:
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 2 T. dill pickle juice
  • 2 T. roughly chopped fresh dill
  • 1 T. lemon juice
  • 1 tsp. stone ground mustard
  • salt and pepper to taste
  • 1 c. diced celery
  • Optional-cranberries, chopped walnuts for crunch

Instructions

  1. Poach Chicken Breasts:
  2. Trim any fat from 2 large skineless, boneless chicken breasts
  3. Add to large pot
  4. Cover with chicken broth (or water) by at least an inch
  5. Add 3 springs of thyme, 2 bay leaves, 3 springs of parsley, 3 large pieces celery, 1 tsp salt, 1 tsp cracked pepper
  6. Bring to a boil.
  7. Reduce to a simmer and let cook for 18 minutes.
  8. Remove chicken and allow it to cool prior to dicing it.
  9. (Strain and freeze the remaining chicken broth liquid for another use.)
  10. Dice chicken and reserve.
  11. In a large mixing bowl, combine all base liquid ingredients. Add in chopped dill, celery, salt, pepper, and stir. Add in optional dried cranberries and chopped walnuts to taste.
  12. Allow to chill in the refrigerator at least 30 minutes.

Notes

Substitute basil for dill or grapes for cranberries. Almonds also make a great swap ingredient instead of walnuts.
