Baked Cinnamon Sugar Pecans

Have any Bah Humbugs in your house this holiday? Baked Cinnamon Sugar Pecans are the cure!

Not only does the house fill with the smell of warm cinnamon (better than any candle – thank you), but I dare any bah humbugs to try and remain a Scrooge after sampling warm pecans from the oven! The spirit of Christmas is the secret ingredient in this recipe.

Tis the season to abandon your diet and go for the YUM!

The beauty of making this candy substitute is that the recipe is incredibly simple to make and one even the kiddos can help you with. So, throw on an apron and invite the kids into the kitchen!

Pecans or walnuts are good choices for this recipe so the sugary mixture bakes inside all of the nuts’ nooks and crannies. My walnuts were frozen in the freezer, so I used only pecans.

To make Baked Cinnamon Sugar Pecans preheat your oven to 300 degrees. Next, simply whisk one egg white with water and pour it over a bowl containing three cups of raw, unsalted pecans. Add the remaining ingredients, stir, and ta-da! Transfer the wet, coated pecans to a parchment-lined baking sheet and bake at 300 degrees for 25-28 minutes. That’s it!

After removing the pecans from the oven, let them cool before moving them from the baking sheet. The toughest part of making the pecans is not eating them while they’re warm! The pecans will be naturally clumped together because of the melted sugar coating, but that’s okay.

This is what the pecans look like as soon after they are removed from the oven and before they cool.

Once the pecans have cooled, break them up with your hands and transfer them to glass jars or Ziplock bags for simple storage. You could easily gift this dainty holiday snack by tying a ribbon around a pecan-filled mason jar and adding a gift tag! If you’re going to make a DIY foodie gift, make this one! It’s a guaranteed win and you’ll love how easy it is to prepare.

Send holiday dinner party guests home with a gift – jarred cinnamon sugar pecans. They’ll love you for it!

Candied pecans also make a delicious addition to any salad or as a yogurt mix-in. I served Baked Cinnamon Sugar Pecans to guests in place of a heavy dessert. Rather than eating a rich dessert after our steak dinner, we enjoyed hot coffee and handfuls of sweet pecans!

Ingredients

  • 3 cups raw, unsalted pecans
  • 1 egg white
  • 1 T. water
  • 1/2 c. sugar
  • 1/2 c. brown sugar (packed)
  • 1 T. cinnamon
  • large pinch Kosher salt

Instructions

  1. Preheat over to 300 degrees.
  2. Line a baking sheet with parchment paper.
  3. Whisk egg white with the water in a small bowl until foamy.
  4. Pour egg white mixture on pecans in a large bowl and stir until pecans are well coated.
  5. Combine remaining ingredients in separate large bowl. Then, add sugar mixture to pecans.
  6. Stir pecans until the sugar mixture evenly coats the nuts.
  7. Transfer pecans to the baking sheet and spread them until almost flat.
  8. Bake at 300 degrees for 25-28 minutes. (Check them at 25 minutes.)
  9. Remove from oven and allow pecans to cool completely before transferring to storage containers.

Notes

I did not stir the pecans half-way through baking, but you can.

Baked Apples Filled with Oatmeal, Dates and Brown Sugar

Hello, Fall! Good to see you again.

October is the best month of the year. Why? It’s my birthday month (holla!), breweries are prepping for Oktoberfest, and the food….oh, the food!

Many cooks have prepared baked apples to welcome autumn, but my recipe incorporates chopped dates and walnuts with oatmeal to bring home real fall flavor. Leave room for dessert tonight because you will want to gobble up the entire apple. They serve well with vanilla bean ice cream too!

Prior to baking, stuff these babies as full as you can with the filling ingredients.

Here are the instructions for Baked Apples with Oatmeal, Dates and Brown Sugar:

1. Preheat oven to 350 degrees.

2. Wash two Pink Lady Apples. Core out the inside without penetrating the bottom. (Remove about half of the apple’s core.)

3. Add the butter to a small microwavable bowl and heat it about 10 seconds until it’s melted. Add remaining filling ingredients. Stir to combine all thoroughly.

4. Stuff each apple with the filling.

5. Set apples upright into baking dish. Add enough water around the apples until the bottom surface is covered.

6. Bake apples at 350 degrees for one hour. Serve warm. Devour.

The apple’s exterior color fades during baking, but the flavor is accentuated. Trust me. These apples are delicious on their own or served with vanilla bean ice cream.

Ingredients

  • 2 cored, large Pink Lady apples
  • 4 T unsalted butter
  • Filling:
  • 1/4 c. oatmeal
  • 1/4 c. chopped dates
  • 1/4 c. brown sugar
  • 1/4 c. chopped walnuts

Instructions

  1. Preheat oven to 350 degrees.
  2. Wash and core apples but don't remove all of the inside of the apple. Leave enough apple that you don't pierce the bottom of the apple.
  3. Melt butter in a microwavable dish.
  4. Add remaining filling ingredients.
  5. Stir butter and filling ingredients thoroughly. Stuff filling into each apple evenly. (You can add a few extra walnuts or oatmeal, if you desire.)
  6. Place apples in baking dish. Fill dish with enough water to cover the bottom of the dish.
  7. Bake uncovered for 1 hour.
  8. Serve warm.

How to Make Basic Barbecue Sauce

One condiment this Kansas girl is never without is barbecue sauce. Well, except that one time when the ribs were ready and yep, I was out of the liquid gold. Not one to run to the store for only one condiment, I decided to make my own sauce.

Since it’s summer I tend to use quite quite a bit more barbecue sauce on burgers, ribs, and even inside lettuce wraps. So, in case you’re like me, here’s How to Make Basic Barbecue Sauce when the bottle stuff just won’t do or you’re out of it. This recipe is ketchup based and is more of a Kansas City barbecue sauce.

Barbecue is a staple food group when you live in Kansas. We smoked this rack of ribs on our Traeger Tailgater low and slow adding barbecue sauce at the end of cooking.

Once you’ve combined all of the barbecue sauce ingredients using a whisk in a saucepan, turn the pan to low heat and simmer for about 15 minutes. Be sure to stir often. Remove the pan from the burner and allow to cool before pouring the barbecue sauce into a Bell jar and sealing it. Your sauce will keep for about two weeks in the refrigerator.

While there are many kinds of barbecue sauce varieties from Carolina style vinegar based to Kansas City style tomato based, I prefer the later on everything from smoked pulled pork and ribs to cheddar cheeseburgers. Ingredients

  • 2 c. ketchup
  • 3 T. dark brown sugar
  • 3 T. cider vinegar
  • 2 T worcestershire
  • 2 tsp salt
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  1. Combine all ingredients in a small saucepan.
  2. Stir the ingredients well on a low simmer until fully incorporated.
  3. Simmer for about 15 minutes stirring often.
  4. Remove from heat and allow to cool.
  5. Pour sauce into glass jar and seal with a lid.
  6. Refrigerate jarred sauce.

Notes

You can also use smoked paprika instead of regular paprika. Want a more Memphis style sauce, add more vinegar and molasses for sweetener.

5 Ways to Use Leftover Orange Peels to Improve Your Home

Call me thrifty. I love to repurpose stuff. I save money and get to use something “new.”

If you’re like me, you appreciate finding new purposes for old household items. It comes as no surprise that I would think, “hmmm, how can someone re-use orange peels?” and then create 5 Ways to Use Leftover Orange Peels to Improve Your Home post just for you. Random? Maybe. Awesome? Definitely. Most people just discard the peel, which is a waste literally and figuratively.

  1. AS A ROOM FRESHENER. Fill a small pot with water. Add orange peels, a cinnamon stick, and sliced apples to this stovetop potpourri (simmer on low) and your home is smelling phenomenal in no time. If you prefer the smell in cinnamon in fall and it’s July, add orange peels to a essential oil diffuser with a spring scent.

    Just don’t forget to turn off the stove before you leave the house or go to bed!
  2. USE THE ORANGE ESSENCE AS PART OF A CLEANING SOLUTION. Add the peels of 2-3 large oranges to a mason jar. Fill half way with white distilled vinegar. Secure lid and store in a dark place (like your pantry or cabinet) for at least two weeks. Strain the orange-infused vinegar and pour using a funnel into an empty spray bottle. Top off with water and you’re good to go! Spray countertops or the inside of the sink to clean it and add a pleasant orange smell.
  3. REFRESH YOUR GARBAGE DISPOSAL. Use the old orange peels that you strained from the cleaning solution you made and put them down the drain. Run the disposal. Ahhhh the sweet smell of orange!
  4. INFUSE VODKA. Add orange peels to a vodka bottle in your liquor cabinet, secure lid, and store unopened for a a few days to a week. It’s martini time. Yes, that improves your home!   5. STORE IN YOUR BROWN SUGAR. Don’t you hate it when your nearly full bag of brown sugar becomes rock hard because it wasn’t an airtight seal? Adding orange peels to your brown sugar will keep it soft and add a subtle orange flavor. You only need one or two peels for a bag of brown sugar.

You’ll never be able to toss an orange peel in the trash again! You’ve got the tools to make your house a citrus-happy home. Now, orange you glad?

Pumpkin Spice and Everything Nice Apple Cocktail

I dreamt of making this cocktail while at work on Friday. Don’t judge me. One taste of my Pumpkin Spice and Everything Nice Apple Cocktail and you’ll know why I was a tad bit distracted by my day dreams.

I use Barnett’s pumpkin vodka, a cheaper distilled variety, but it has great flavor for any fall seasonal drink. So where does the spice come from? Add pumpkin spice to sugared graham cracker dust and rim your glass in it before pouring your shaken cocktail. I garnished this one with an red apple slice.

Pumpkin Spice and Everything Nice Apple Cocktail

Reminiscent of pumpkin pie and apple cider, this cocktail is fall in a glass.

Ingredients

  • Cockail Mix:
  • 4 cups apple juice
  • 3 oz. pumpkin vodka
  • cubed ice
  • Rim Sugar:
  • two finely ground graham crackers
  • 1 tsp brown sugar
  • 1 tsp pumpkin spice
  • half an apple

Instructions

  1. Mix the rim sugar ingredients together in a small bowl.
  2. Rim your small cocktail glass with an apple slice to moisten it.
  3. Turn your glass upside down in the bowl of graham cracker mixture.
  4. Fill glass with cubed ice.
  5. Add the apple juice and vodka to a martini shaker and shake vigorously.
  6. Pour into iced filled glass.
  7. Garnish cocktail with a slice of apple.
