Soft Carrot Cake Energy Balls

Soft carrot cake with cream cheese icing. For over a decade of my childhood, I ordered carrot cake for my birthday cake when dining out OR when my mom asked what kind of celebratory dessert I wanted. Every. Single. Year. Today, I eat fewer heavy desserts like dense cakes or cookies, but I still love sweets and I know you do, too!

My Soft Carrot Cake Energy Balls are delicious and filling enough as a breakfast bite or snack that you won’t be hangry by meal time. The recipe’s mixture consists of nature’s best ingredients including dates, raisins, chia seeds, and say it with me…carrots! Admittedly, I use peanut butter as the binder so if you’re someone with a peanut allergy, this is not your recipe.

This is the right consistency for the mixture to form into balls.

Did you know carrots are a power food packed with nutrients and vitamins essential to our body’s good health? We all know that eating carrots improves one’s vision, but they also slow the aging process. Yes, please! (And there are 8 more reasons to eat them!) I know you’re going to love how simple it is to make this recipe and the clean-up couldn’t be easier.

Ingredients

  • 1 c. rolled oats
  • 3/4 c. shredded carrot
  • 1 c. smooth peanut butter
  • 1/2 c. diced dates
  • 1/4 c. raisins
  • 1/2 tsp. chia seeds
  • heavy pinch sea salt

Instructions

  1. Add all ingredients to a food processor and pulse until completely combined.
  2. Test the mixture to see if it binds to make a ball. If it isn't quite ready, just add more peanut butter.
  3. Remove the blade from the food processor.
  4. Using your hands, roll the mixture into tight balls about the size of a quarter.
  5. Transfer the carrot cake balls to a Ziplock bag or storage container and refrigerate until you'r ready to eat them. They last a couple weeks, if refrigerated.

Notes

Some people enjoy this recipe with shredded coconut added.

5 Craft Beers You Need to Try

I can’t say when it happened, but there’s not debating it now. I’ve clearly switched over from my former life as a red wine drinker to a true craft beer fan. Cheers to that!

According to the Brewer’s Association, there were over 6,300 craft breweries in the United States as of 2017. The largest segment of growth in that count came from the opening of new brewpubs starting in 2012, a number that has exponentially grown since the report. So, it’s no surprise that my love of the suds is also growing exponentially!

A fan of unfiltered and fruit-forward brews, I’ve narrowed down my list to five must-have beers. I don’t like hoppy beers so you won’t find those on my list. However, my go-to selection includes a few shining stars you should be sipping on! Without further a do, I give you 5 Craft Beers You Need to Try!

  1. Boulevard Unfiltered Wheat 4.4% – Described as an “ale with natural citrusy flavor,” it’s Kansas City’s Boulevard Brewing Company’s best selling beer for its drinkability. Why do I love it? It’s smooth, full of flavor, and drinks like a slightly  sweetened ballpark light beer. I’ve yet to find a type of food that I can’t drink it with OR a friend who doesn’t want to drink one with me. If you have the opportunity to visit the brewery, I highly recommend making a reservation for a tour of the facility. Having visited on my birthday a few years back, I have fond memories of toasting to another great year in their tasting room!

  2. Free State Brewery’s Guavatas Sour 4.65% – A graduate of the University of Kansas, I spent Mondays at Free State Brewery drinking ales shoulder-to-shoulder with townies and college students alike on $1 Pint Night. The “sour” craze wasn’t popular back in the day (boy did I just sound old!) so I drank their Wheat State Golden or Ad Astra Ale. Today, I’m a big fan of sours so I can’t recommend their small batch Guavatas Sour enough! Don’t be alarmed to see pulpy bits of guava in your glass after the pour – that’s normal! Why do I love it? It’s tropical notes beckon thoughts of summer and it’s mild tartness finishes nicely. The brewery’s slogan “Because Without Beer Things Don’t Seem To Go As Well” basically sums up my college experience and I’m still drinking their beer two decades later. That says something about their beer’s consistency and quality.
    Free State Guavatas Sour

    3. Uinta Crisp Apple Ale 4.0% – Clearly I’m a fan of beers with fruity notes. I grabbed a six back of Uinta’s Crisp Apple Ale on a whim and I’ve purchased it many times since then. The Uinta Brewery, located in Salt Lake City, was founded by a guy who transitioned from a home brewer to a professional set-up in a leased mechanic’s garage. They brew all types of craft beer, but I’m partial to their brews featuring fruit including grapefruit, mango, and apple. Why do I love it? It’s a light beer with a slight apple after-taste, which is always refreshing on the palette. Craving apple pie, now?

    Uinta Apple Ale

    4. Boulevard Jam Band Berry Ale 5.9% – Unlike any beer I’ve ever tasted, Boulevard’s Jam Band Berry Ale is like a dessert in a glass. This ale’s bold taste includes blueberries, raspberries, and tart cherries. I assumed this beer would be one Boulevard would make only for awhile due to the cost of using loads of fruit. I assumed it would be one of those one-offs that wouldn’t stay on liquor store shelves. I’m glad they proved me wrong. Lucky us! If you don’t like sweet beers or ciders, steer clear of this one. Why do I love it? Loaded with berry and citrus flavor, this beer balances malt with real fruit flavor. It’s my jam! 5. Roadie Grapefruit Radler 4.2% – So I need to apologize. This beer isn’t one that you can try today because it is a seasonal that is only available April-August, but it is worth the wait! Brewed in 5 gallon barrels to be heavy in citrus flavor using grapefruit puree, it’s an tangy, crisp beer perfect for drinking on a hot summer day. Why do I love it? I love all things grapefruit. Denver’s Great Divide Brewing Company’s seasonal beer is one of my must-haves. It even smells good (ha!). Although it has a tart finish, you can drink more than one in a drinking session.

    It’s not easy to narrow my list to five craft beers, but this compilation represents my current faves. I might just have to write another post for my go-to seasonal picks this fall! Mixed Berry Popsicles with Coconut Water

The quintessential summer dessert is the classic popsicle. Wouldn’t you agree? Sure melted s’mores are delicious, but I consider s’mores more of a fall dessert made around a campfire. I have fond memories of the ice cream truck cruising down the city street. It conjures up nostalgic thoughts of having to choose from tri-colored bomb pops, ice cream drumsticks or fruity popsicles. A tough decision! Which one did you choose? I used my 75 cents to buy the rainbow popsicle almost every time.

Now an adult, I still mark summer by indulging in a colorful popsicle, but I’d rather not ingest corn fructose syrup or ingredients I can’t pronounce. So, this summer I made Mixed Berry Popsicles with Coconut Water, a thirst-quenching treat made from natural flavors!

I used frozen, mixed berries and coconut water, which is low in calories and high in nutrients. The benefits of coconut water will convince you that it’s worth trying!

I used frozen organic fruit, but you could easily use canned or fresh fruit as well.

I prepared them using Koji popsicle molds, which I purchased at Target last year. Filling the molds is as easy as adding a tablespoon (or two!) of mixed frozen berries, filling the mold with coconut water almost to the top of it, a tiny bit of Stevia, and a pinch of lime zest for added tanginess. You could add lime juice instead of zest as well. Prepping the yummy popsicles only takes minutes and they are ready to enjoy within a few hours of placing them in the freezer.

When you’re ready to eat them, remove the popsicle molds from the freezer and let them sit out on the counter for about ten minutes or so. Allowing them to thaw out will help you easily remove the popsicles from the mold. Isn’t it cool how the whole berries can be seen through the frozen coconut water? These popsicles are not only yummy tasting but they’re pretty, too!

What was your summer like? I spent mine living for the weekend and trying to squeeze the most delightful moments out of each day. I’m not ready for fall temperatures or lattes just yet. I’ve got popsicles to enjoy on the back porch while watching the gorgeous Kansas sunset!

Blackberry Mint Fizzy Cocktail

Of all of the seasons to make cocktails, summer is my favorite! A cool drink with the fresh flavors of muddled fruit and mint is refreshing and bright in flavors and colors. My Blackberry Mint Fizzy Cocktail is a drink you can make for one or as a big batch for guests, if you triple the ingredients!

The best part of a serving a muddled cocktail is that it looks as if it required a ton of effort to make, but that’s simply not true. If you don’t own a mortar and pestle, you can use a wooden spoon inside of a tall glass to smash the blackberries for this drink.

I would recommend wearing an apron or coving the mortar with your other hand when muddling the blackberries to prevent stains on your shirt.

Once the blackberries are completely smashed, scoop the fruit goop (that’s a yummy word!) into the cocktail glass. (Instead of muddling the mint leaves, I tore them into super small pieces with my hands releasing their herbal aromatic flavor before dropping them into the glass.) Then add the sugar.

Next, add the juice of one lime wedge.

Summer drinks are made so much better tasting because of citrus from an orange, lime or lemon.

Now, add the vodka – yes, please!

You’re almost done! All you need to do is top off the glass with crushed ice and bubbly club soda to the rim.

No need to transfer this cocktail to another glass to try to shake up the ingredients. Simply add colorful straws and stir the drink gently.

Garnish the glass with a sprig of fresh mint, a lime wedge, more blackberries, and colorful straws before serving! Cheers my dears!

You could easily swap blackberries for strawberries, blueberries, or another fruit of your choice.

Ingredients

  • 4-5 blackberries
  • 4-5 mint leaves
  • 1 tsp sugar.
  • 1/2 cup vodka
  • Crushed ice
  • Lime juice of one lime wedge
  • 1/2 cup club soda
  • 1-2 blackberries and a mint sprig for garnish.

Instructions

  1. Muddle 4-5 blackberries.
  2. Tear 4-5 mint leaves. Add blackberries and mint into a cocktail glass.
  3. Add 1 tsp sugar.
  4. Add 1/2 cup vodka.
  5. Fill cocktail glass halfway with crushed ice.
  6. Lime juice squeezed from one small lime wedge.
  7. Fill glass nearly full with crushed ice.
  8. Fill remaining space in glass with club soda about 1/2 cup.
  9. Stir cocktail with straw and top with fresh blackberries and a mint sprig for garnish.

Notes

You could easily substitute vodka for rum or silver tequila. Looking for a non-alcoholic cooler? Take out the booze!

Chicken Parmesan Meatballs

Today, I turn over a new leaf. My goal is to prepare meals for the upcoming work week! The challenge? To make all of our meals low-carb.

After snagging marked down ground turkey from Target ($2 off!), I knew I had the base for what would become delicious Chicken Parmesan Meatballs hot from the oven!

This recipe is incredibly simple to prepare and includes easy clean-up — a win win, right?! I know you’re a hard working, busy home cook and the last thing you need is a complicated dinner recipe. I can help!

Begin by setting out all of your ingredients, grab necessary utensils including a large mixing bowl, and preheat your oven to 400 degrees. Then, all you need to do is mix all of the ingredients (except the sauce and some of the cheese) with your hands in the large bowl. Spray a foil-lined baking sheet with cooking spray. Later, place medium size meatballs on the baking sheet, top with jarred spaghetti sauce and a bit of shredded parmesan.

Feel free to add more sauce than I did, if you prefer.

Bake the meatballs at 400 degrees for 15 minutes. Then, remove the meatballs from the over and cover in a tablespoon of more spaghetti sauce and a heaping amount of shredded mozzarella and a bit more shredded parmesan. Return to the baking sheet to the oven, but turn the oven setting to broil. Watch the meatballs closely and remove them once the cheese is bubbly  and golden brown.

The meatballs slide off the foil easily.

You could garnish with more chopped fresh parsley, if you would like to add color! Either eat the meatballs by themselves or add them on top of a bowl of pasta and more spaghetti sauce. The Chicken Parmesan Meatballs could also be served inside a toasted, halved bageutte to make it into a sandwich. (We’re really trying eat low-carb meals so we nixed that idea, but boy would it be scrumptious! While these meatballs have bread crumbs, we’re not serving ours on pasta or as a sandwich thus cutting significant carb intake.)

Add these meatballs to your spaghetti sauce for dinner pasta or eat them individually as a hearty small plate.

When the work week leaves you feeling drained and you can’t find the energy to make dinner, Chicken Parmesan Meatballs is a grab and heat-up dinner option that goes well over al dente pasta or inside a crusty bread baguette!

Ingredients

  • 1 lb. ground chicken
  • 1/2 c. Italian bread crumbs
  • 2 T. chopped onion
  • 2 T. chopped fresh parsley
  • 1/2 c. shredded parmasen
  • heavy pinch of kosher salt
  • heave pinch of ground pepper
  • 1 clove of garlic chopped
  • 1 T. Italian seasoning
  • 1 egg whisked
  • Jarred spaghetti sauce
  • 1 c. shredded mozzarella

Instructions

  1. Preheat the oven to 400 degress.
  2. Line a baking sheet with foil and spray the foil with cooking spray.
  3. Mix all of the ingredients, expect the spaghetti sauce and mozzarella, in a large bowl by hand until well incorporated.
  4. Form medium sized meatballs by hand and place on the foil lined baking sheet.
  5. Top each meatball with about a teaspoon of spaghetti sauce and lightly sprinkle parmesan on top.
  6. Bake the meatballs for 15 minutes.
  7. Remove the meatballs from the oven, top with more sauce and add a heaping amount of mozzarella on top of each one. Set the over to broil.
  8. Broil the meatballs on the top shelf for 1-2 minutes until the cheese is bubbly, golden brown.
  9. Serve the meatballs warm or add to pasta with more sauce.

Baked Cinnamon Sugar Pecans

Have any Bah Humbugs in your house this holiday? Baked Cinnamon Sugar Pecans are the cure!

Not only does the house fill with the smell of warm cinnamon (better than any candle – thank you), but I dare any bah humbugs to try and remain a Scrooge after sampling warm pecans from the oven! The spirit of Christmas is the secret ingredient in this recipe.

Tis the season to abandon your diet and go for the YUM!

The beauty of making this candy substitute is that the recipe is incredibly simple to make and one even the kiddos can help you with. So, throw on an apron and invite the kids into the kitchen!

Pecans or walnuts are good choices for this recipe so the sugary mixture bakes inside all of the nuts’ nooks and crannies. My walnuts were frozen in the freezer, so I used only pecans.

To make Baked Cinnamon Sugar Pecans preheat your oven to 300 degrees. Next, simply whisk one egg white with water and pour it over a bowl containing three cups of raw, unsalted pecans. Add the remaining ingredients, stir, and ta-da! Transfer the wet, coated pecans to a parchment-lined baking sheet and bake at 300 degrees for 25-28 minutes. That’s it!

After removing the pecans from the oven, let them cool before moving them from the baking sheet. The toughest part of making the pecans is not eating them while they’re warm! The pecans will be naturally clumped together because of the melted sugar coating, but that’s okay.

This is what the pecans look like as soon after they are removed from the oven and before they cool.

Once the pecans have cooled, break them up with your hands and transfer them to glass jars or Ziplock bags for simple storage. You could easily gift this dainty holiday snack by tying a ribbon around a pecan-filled mason jar and adding a gift tag! If you’re going to make a DIY foodie gift, make this one! It’s a guaranteed win and you’ll love how easy it is to prepare.

Send holiday dinner party guests home with a gift – jarred cinnamon sugar pecans. They’ll love you for it!

Candied pecans also make a delicious addition to any salad or as a yogurt mix-in. I served Baked Cinnamon Sugar Pecans to guests in place of a heavy dessert. Rather than eating a rich dessert after our steak dinner, we enjoyed hot coffee and handfuls of sweet pecans!

Ingredients

  • 3 cups raw, unsalted pecans
  • 1 egg white
  • 1 T. water
  • 1/2 c. sugar
  • 1/2 c. brown sugar (packed)
  • 1 T. cinnamon
  • large pinch Kosher salt

Instructions

  1. Preheat over to 300 degrees.
  2. Line a baking sheet with parchment paper.
  3. Whisk egg white with the water in a small bowl until foamy.
  4. Pour egg white mixture on pecans in a large bowl and stir until pecans are well coated.
  5. Combine remaining ingredients in separate large bowl. Then, add sugar mixture to pecans.
  6. Stir pecans until the sugar mixture evenly coats the nuts.
  7. Transfer pecans to the baking sheet and spread them until almost flat.
  8. Bake at 300 degrees for 25-28 minutes. (Check them at 25 minutes.)
  9. Remove from oven and allow pecans to cool completely before transferring to storage containers.

Notes

I did not stir the pecans half-way through baking, but you can.
